Tutu Excited to Be Two: A Party

We celebrated Bean's birthday with family and friends last week, and it was SO RAD!

Initially the plan was to have the party at a local park. However, the morning of, it was cold and rainy and windy, and when we went to the park to see how everything looked, it was completely packed, despite the gloomy weather. (Here parks can only be booked in the summer. Boo!)

And so, with just half an hour to go before people would arrive, we decided to fall back on the backup plan of having it at our house. Then came a flurry of text messages letting everyone know that they should come to our house rather than the neighborhood park, and a lot of rearranging furniture in the living room and the family room, Shaun and I had things together pretty quickly. I was pretty impressed with us, ha ha ;) We moved all of our exercise machines and equipment to the laundry room, white armchairs to our bedroom, set up the room divider right past the bathroom door to block the crazy messy kitchen, and then brought every table and coffee table out, cleared off the computer desk, and covered them all with pink tablecloths and oodles of food. Then we blew up balloons and swept the front porch and suddenly people started showing up. (K and her parents actually showed up early, thank goodness and played a huge role in helping us get ready! Thanks guys!)

So, basically the prep time was short and, to us, crazy, but once our friends began showing up everything seemed perfect and was just completely fun. We have such wonderful friends. We really feel so lucky. Y'all are really just the best! In addition to having Shaun's parents here from out of state, my sister and her husband also came down, as well as my brother David, and Bean's birth mom and birth grandma came, and some of our friends from church (Scott and Rachel and their 3 boys, Kyle and Tess and their daughter, Natalie and her daughter, Grant and Bri and their son...), work (Shaun's old co-worker Becca and her family), Bean's playdate buddy (EZ and his mom), and our adoption buddies (Kent and Kayla and their son).

Our house was bustling with energetic kiddos, and it was crazy-fun!

Bean got so many nice gifts, even though we tried to ask everyone not to bring anything. We feel so loved, and Bean is having so much fun with cute new toys, like a little Rapunzel toy with other disney friends, frog slippers, new books.... We have such kind generous friends. We love you all!

K got Bean a bubble making machine, and it was a huge hit with all of the children. They had so much fun watching the bubbles generate out of it. K and her family also gave Bean a TON of other awesome gifts. We are so glad we can spend time with them, and that Bean knows and loves them too.

Auntie Jen and Uncle Steve (and Iris's cousin Sav, who is due soon!) also sent some gifts, including a shopping cart with little groceries and it. The kids were also huge fans of playing with this, and so we had to bring out the baby doll stroller to ease off some of the contention because so many kids wanted to play with it.

We printed out some coloring book formatted pictures of Bean from the last few months, and had crayons out so they could color pictures of our cute little Bean. I know that Shaun and I both had so much fun visiting with friends and family.

Even though we didn't really have much structure or organization to activities, it was a super fun party. We had a huge cooler full of water bottles and pop, and a table covered in different treats, like tortilla chips with Texas Caviar dip, a veggie tray, Neapolitan taffy, cookies, cake, and ice cream. The Texas caviar was a huge hit! The recipe was adapted slightly from my friend Ali's recipe for it. It is super yummy! Her version and ours are both below (well, her's is linked below :) ).  I highly recommend this stuff. It is amazing. It went really fast, even though I thought we had a ton with a giant bowl full of it. :) My sister Rach made a red velvet poke cake, and that was also a huge hit!

Seriously, the party was the perfect combination of wonderful friends and family, delicious food, and adorable kiddos. We love our sweet little girl, and are tutu excited that she has turned two!

Texas Caviar Recipe

Adjusted from our friend Ali's recipe, found here.

• 1 tablespoon garlic salt
• 1 tablespoon onion powder
• 1 tablespoon sugar
• 2 tablespoons dried oregano
• 1 teaspoon fresh ground black pepper
• 1 teaspoon dried thyme
• 1 teaspoon dried basil
• 1 teaspoon dried parsley
• 1/4 teaspoon sea salt

• 1 can kidney beans
• 1 can great northern beans (white)
• 1 can black beans
• 2 cans diced tomatoes
• 1 green pepper, chopped
• 1 jalapeƱo, chopped
• 1 orange or yellow pepper, chopped
• 1 red pepper, chopped
• 1/2 cup white onion, diced
• 2 avocados, chopped
• chopped cilantro, to taste
• Juice of 1 large lime

Directions:

Mix seasonings together and set aside.

Empty canned beans into a colander. Rinse well and drain, and then add tomatoes and chopped peppers and onion to colander, continuing to allow to drain. Pour into a mixing bowl.

Add avocados, cilantro and lime juice. Sprinkle with seasoning mix, stir and cover, keep in fridge, and serve soon with tortilla chips!

We made this again the day after the party, since Rina missed it and really wanted the Texas Caviar. We were out of tortilla chips, but had a huge bag of sort of dried out corn tortillas, so we made our own chips, using this recipe. (We used grape seed oil,) I was a huge fan of them. Highly recommend!
