Honey-Whole Wheat Rolls Recipe

Honey-Whole Wheat Cloud 9 Rolls
  • 1 cup boiling water
  • 1/2 cup (1 stick) unsalted butter 
  • 3 eggs
  • 3/4 tsp sea salt
  • 1/2 cup honey
  • 1 heaping Tablespoon yeast
  • 5 cups of whole wheat bread or pastry flour, plus additional flour for dusting
  • Extra butter, if desired

Pour boiling water into mixing bowl. Add butter; melt. Add eggs and beat to death. Add salt, honey, yeast and 4 cups of flour. Mix well. Add fifth cup and additional flour as needed. Mix for 8-10 minutes in bread mixer or knead by hand. 

Cover the bowl and let dough rise in a warm place until about double in size. Once risen, punch dough down, and divide in half. Roll out each half into a large circle (like pie dough--thin) with extra flour used as needed to keep from sticking. Spread extra butter over dough if desired. Cut into 16 triangles. Start rolling from wide side to form crescent. Place on ungreased baking pan, cover loosely with plastic wrap and let raise in a warm place for 30 minutes to an hour (until they are well-risen and fluffy looking). Bake 325 for 12-15 minutes.
